Mexican Soup



Just finished making this and it's delish.......


2 cans stewed tomatoes (15 oz) don't drain
1 can stewed tomatoes with spices (15 oz) don't drain
1 can sweet corn (11 oz) drained
2 or 3 cans of beans (black, red, garbonzo) (15 oz) don't drain
1 lb cooked meat (turkey, beef or tuna)

1 tbsp hot chilli powder
1/2 tbsp cumin
1/4 tsp oregano
1/4 tsp basil
1/2 tsp black pepper

Simmer and top with grated cheese and serve with tortilla chips

I put everything and uncooked meat and some bacon into a crock pot for afew hours and have served over rice

Friday is the day to Focus on.....

Avocado Chocolate Banana Bread

Made this again today and simply had to repost!

..... Wow oh wow oh WOW!
You've just got to try it!!!!



Ingredients: 
1 medium avocado
2 overripe bananas
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon lemon juice
1/4 cup olive oil
2 cups flour
1/4 cup cocoa powder
1/2 cup semi sweet chocolate chips

Preparation:

In a mixing bowl, blend avocado and banana until pureed. Add in sugar, baking soda, baking powder, salt, lemon juice, and olive oil. In separate bowl, sift together flour and cocoa powder. While mixer is on low, gradually add flour mixture until well combined. Stir in chocolate chips. Spread batter in greased loaf pan, batter will be thick and sticky. Bake at 350 degrees for 40-50 minutes. Cool on wire rack, slice, and serve.
